'Chop suey' (chino tradicional: ??) es un plato de origen chino-americano que literalmente significa "trozos mezclados". Usualmente consiste en carnes (puede ser pollo, res, camarón o cerdo), cocinado rápidamente en un wok con vegetales como apio, pimientos, porotos verdes, entre otros. Es servido con arroz blanco cocido al vapor. Una explicación acerca del origen del Chop suey es que un cocinero chino en Norteamérica, al verse acosado por los mineros a quienes cocinaba, y al no tener qué ofrecerles, hizo un revoltijo de verduras y sobrados de arroz y se los dio en la comida; los mineros preguntaron acerca del nombre del suculento plato, a lo que a éste se le ocurrió decir "Chop Suey", que en el idioma chino significa "revuelto o mezcla de todas las sobras", o "trozos mezclados" Con el paso del tiempo el Chop Suey ha sido modificado y mejorado, actualmente el ingrediente principal, aparte de los antes mencionados, es el brote de frijol mung o frijol chino, en muchos lugares erróneamente le llaman "brotes de soya", pero en realidad la semilla usada es el frijol mung verde (haba mung o habichuela mung), este ingrediente actualmente sobresale de los demás en la preparacion del platillo.
