'Aspartamo' o 'aspartame' es el nombre de un edulcorante artificial, peptídico, cuya nomenclatura es: Aspartil-fenilalanina-1-metil éster. Es el metil éster del aminoácido fenilalanina unido al ácido aspártico por una unión peptídica. En la industria alimenticia, se lo denomina con las siglas E 951 según indica la clasificación de Números E. Es 200 veces más dulce que el azúcar de mesa (sacarosa) y posee un valor energético de 4 calorías por gramo. Es totalmente metabolizado por el organismo, su hidrólisis produce ácido aspártico, metanol y fenilalanina. El metanol, derivado de su descomposición metabólica CH3OH es un alcohol tóxico, caracterizado por provocar ceguera. Se usa como endulcorante de bajas calorías para diferentes alimentos y bebidas, también como edulcorante de mesa. La ingesta máxima recomendada es de 40 mg/kg por día. Una gran dosis de aspartamo puede resultar tóxica. Existe controversia en torno a si el consumo de aspartamo puede producir cáncer u otros riesgos importantes para la salud.
